Handmade Holidays: Lamington Jars

The festive season is a time filled with the joy of shared laughter and generous gift-giving, generally speaking. But what happens when you find yourself stumped trying to find the perfect gift to give those you care about most? Rather than sifting through the shelves at the local shops again and again, why not put in a little bit of extra love (and keep a few extra dollars in your pocket) with one of these three handmade gifts!

Need a gift for that friend with a sweet tooth? Or maybe it’s your Nan who loves nothing more than to baking heaps of sweet treats for the family come the holidays. In any case, these cute (and super easy) homemade lamington jars are a festive and downright tasty gift idea for that baker in your life!

What you’ll need:

  • 1 x small jar (at least 250 ml)
  • 1 x large jar (at least 750 ml)
  • 85 g self-rising flour
  • 32 g cornflour
  • 134 g caster sugar
  • 600 g desiccated coconut
  • 32 g cocoa powder
  • 32 g icing sugar
  • Decorative cloth and twine and tags

How to put it all together

  • Fill large jar from the bottom up with flour, cornflour, and caster sugar.
  • Place a layer of cling film into the jar
  • Fill with the desiccated coconut
  • Seal the cling film
  • Seal the jar with decorative fabric and string
  • Fill smaller jar with cocoa powder, then icing sugar
  • Seal the jar with decorative fabric and string
  • Tie the two jars together with a bit of ribbon and decorate with other goodies

The Finishing Touch

The final step is to write up the baking instructions and attach them to the jars to ensure the recipient has all the tools to bake up their delicious gift!

The recipe cards should read:

  • Add 125 g softened butter
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 eggs
  • Combine all ingredients
  • Bake 180C for 30-40 min

Mix together:

  • 76 g softened butter
  • 1/3 cup milk

Once the Lamingtons have finished baking (as per above), let cool, then cut into bite-sized squares.

Mix up frosting and ice the bite-sized bars before finishing them off by rolling in the desiccated coconut to cover.

It’s that easy!

There you have it – a handmade gift with few additional purchases. Trust us, they’ll appreciate the extra effort.

If there are less than a few bakers on your gift list, why not try a handmade keepsake box or a hand-painted tea towel filled with holiday treats (so you can do the baking for them)?
